The next day after Thanksgiving is marked by the appearance of a seemingly endless stream of turkey sandwiches. It is, in its own way, part of the American Thanksgiving tradition. Cook With Essential Oils In The Kitchen

A lot of us can find an essential oil or two in the medicine cabinet that we use for health or beauty reasons. Others may have heard of the benefits of essential oils, but have yet to find the time needed to try them. Many books and articles that have been recently published focus on using essential oils in bath water, inhaling them or rubbing them on skin to better your health, and ingesting them for other illnesses. Essential oils and aromatic hydrosols smell and taste delicious, but also kill bacteria and preserve food to help with digestion. Many essential oils also have mental and physical health benefits that add to their benefits. When cooking with them, you don’t need much to do the trick. A drop or two will often be more than enough for a six person serving.

Essential oils can be found in most grocery or health foods stores, but be sure to ask a sales representative if the oils are artificial or absolute. Most essential oils last for approximately one year. Citrus oils sometimes last a little less, so they should be bought in small quantities.

When using essential oils in cooking, you will find that they have the most flavor in raw food dishes, especially blender items and uncooked deserts, because they evaporate when they are heated. If you would like to add oils to cooked dishes, add the oil before serving and store extra in glass containers, as they have a tendency to react with plastic or metal containers. Make sure to only use one drop to start with as the oils are very concentrated, until you know how the oil will interact with each food. One or two drops are usually plenty unless it is being used in a baked dish and you want to compensate for evaporation.

Carriers, which are used to make extracts when essential oils are too strong and need to be diluted, is what you buy peppermint of vanilla extract from the grocery store. When the oil is too strong or expensive, extracts are a lot more convenient. Good carriers include vegetable glycerin, oils, and alcohol. Carrier oils include sweet almond, avocado, canola, coconut, olive, peanut, safflower, sesame, sunflower, and wheat germ. Check with your local grocery or health store to see which carriers are best to be used in the kitchen.

Hyrdosols, which are scented water, are limited on availability. They are milder and safer to use than essential oils and their strength is comparable to that of tea. This makes it safe to use about an ounce or two per meal. However, that much won’t be necessary for the flavoring you desire, as usually only one teaspoon per cup is good enough. Hydrosols are especially good in ice cream and fizzy beverages. Some of these are very hard to find, including rosemary and lavender, while others are easier such as rose and orange blossom. When purchasing one of these, make sure that they are natural and remember that they are best when they are uncooked.

It is probably worth bearing in mind, however, that because of its reputation, Rioja can often command high prices meaning that, while you’ll be getting a great tasting bottle of Spanish wine, you won’t necessarily be getting the greatest value for money in the world.

Value Regions

If value for money is your thing then you might want to look to Navarra, the neighbouring region to Rioja. It produces some great tasting Spanish wines, similar to those coming out of Rioja, but without the price tag. Also in the North, is Priorato, which is doing big things with some of the international grapes, such as Cabernet Sauvignon, Merlot and Syrah, as well as Tempranillo and Garnacha. Look to Riax Baixas and Rueda for some delicious dry whites, including Albarino and Verdejo, as well as Sauvignon Blanc. In central Spain and to the South, try the regions of La Mancha, Yecla and Jumilla for a selection of dry Spanish whites and fruity reds. The South is, of course, famous for its Sherry production.

Grapes

There are a huge number of grapes grown in Spain, including many international varieties, such as Merlot, Cabernet Sauvignon, Sauvignon Blanc and Chardonnay. Alongside these, you’ll also come across a range of exciting native wines, including Albarino, Tempranillo, Monastrell, Macabeo, Parellada and Xarel-Lo.

Understanding the Lingo

Certain terms are used on Spanish wines to describe how old the wine is and how long it has been aged in oak barrels. These are also indications of the quality of the wine, so it’s worth taking the time to learn what they mean. “Vino Juven” literally means young wine. It is bottled the year after it’s grown and is sold immediately. “Crianza” indicates that the wine has been aged for two years, and spent at least six months in oak (12 in Rioja) and is a relatively easy drinking and young wine. “Reserva” means that the wine has been aged for three years and spent a minimum of one of those years in oak. Finally “Gran Reserva” indicates that the wine has been cellared for five years with at least two in oak and is considered a high quality, mature wine.

Sweetness

The degree to which a wine tastes sweet. Sweetness is tasted on the tongue. Residual sugar also can change the viscosity of a wine, making it richer. The impression of sweetness comes from either sugars, or alcohol, or both, and can be altered in relationship to the presence of acidity. The sweetness of the wine can be determined by the amount of fermented sugar and fruit added to it.

Acidity

The next flavor tasted in wine is the feel of acidity. The acid taste can be felt to create taste and freshness in the flavor established. The taste of acidity creates freshness, crispy and zest in a balanced manner. Most of the drinkers prefer acidity taste of wine to come up with the purpose of having the wine. It helps the people to enjoy the taste and make it meaningful. The characteristic of wine differs in each kind of taste and flavor mixed. The degree to which a wine has sourness, or tartness, a taste perceived on the tongue. Derived from natural grape acids, primarily tartaric and malic, but may also include lactic and acetic from microbial action, whether intentional or otherwise. A compound present in all grapes and an essential component of wine that preserves it, enlivens and shapes its flavors and helps prolong its aftertaste. There are four major kinds of acids–tartaric, malic, lactic and citric–found in wine. Acid is identifiable by the crisp, sharp character it imparts to a wine.

Alcohol

Essential component of wine which gives a sense of sweetness, especially in dry wine, and contributes to body and length of finish. Can be noticed as warmth in the back of the throat. Big is a term used often to describe a wine high in alcohol, usually also heavy in body. Too much alcohol in a wine makes it hot. Its affects run from the obvious to the not so obvious. Alcohol doesn’t just provide the kick it gives texture (“body”), flavor (roundness and sweetness) and vinosity (makes it smell and taste like wine) as well as providing balance and a certain chemical and physical stability to wines. The primary alcohol is known as ethyl alcohol or ethanol, but there are dozens of other so-called “higher” alcohols which though in minute quantites provide hundreds of flavors.

Fruitiness

The fruitiness can be tasted more in wine, because it is product which extracted from rich grapey fruits. It comes in crispy, freshly and tasty flavors. Tasting term for wine which has retained the fresh flavor of the grapes used in its fermentation. Not to be confused with sweetness. A wine can be fruity and not sweet.

Structure

Related to balance; all of the in mouth basic impressions of sweet, sour, salty, bitter, along with alcohol, body, etc., but in absence of the more complex, organoleptic impressions detectable by the olfactory bulb. In other words, everything but the aroma.

Body

The impression of weight or fullness on the palate; usually the result of a combination of glycerin, alcohol and sugar. Commonly expressed as full-bodied, medium-bodied or medium-weight, or light-bodied.

Understanding these basics will help you to figure out the style of wine that suits you best and will help you to be a much more educated consumer. Soon you will be able to taste a wine and by using these wine basics you should be able to narrow down the type of wine you are drinking without even looking at the label.
